Without knowing the steel type, one cannot say whether it will harden in iced brine, in water, in oil, or in air. You might need to mix up some superquench.
As to whether it would be food safe, you'll wash it, yes? Factory knives and custom knives get quenched in things even less appetizing than crankcase oil.
